I've always used Clark's in Rocky Point. Their spicy link sausage is great.

Dumb question of the day. When they use the code P = processing only
D = dressing only and DP = dressing and further processing, is "P" field dressed and skint no head or hoves?
Would "DP" be field dressed with skin on?

Generally the places I've dealt with you have to dress the deer yourself which would be "P" , processing only. You also save money if you debone the meat before you take it to them. There are some places that will completely clean and process your whole deer but I imagine the cost would be higher for that service.
